Here's a breakdown of the main mechanisms:


Oxidation: This is the primary culprit. When roasted coffee beans (and especially ground coffee) come into contact with oxygen, the oils, acids, and aromatic compounds within the coffee react with the oxygen. This breaks down the desirable flavors and aromas, leading to a flat, dull, bitter, or even rancid taste. Think of how a cut apple turns brown – that's oxidation at work. Grinding coffee significantly increases its surface area, which dramatically accelerates oxidation, causing ground coffee to go stale much faster than whole beans.

Degassing/Loss of Volatile Compounds: During roasting, coffee beans develop a multitude of volatile aromatic compounds and a significant amount of carbon dioxide (CO2​). These compounds are responsible for coffee's complex aroma and flavor. After roasting, the beans continuously release CO2​ (a process called degassing). While some degassing is necessary for optimal flavor development, over time, these desirable aromatic compounds also evaporate or "volatilize," leading to a loss of the coffee's vibrant smell and taste. The CO2​ escaping also creates space for oxygen to enter the bean, further fueling oxidation.

Moisture Absorption: Coffee is hygroscopic, meaning it readily absorbs moisture from the air. Moisture can accelerate chemical reactions, including oxidation, and can also lead to mold growth or a musty taste.

Heat: High temperatures speed up all chemical reactions, including oxidation and the loss of volatile compounds. This is why storing coffee in a cool place is important.

All of this is bad news, because coffee is actually a very healthy drink and going stale will make all of those benefits go away.


The primary health benefits of coffee that are jeopardized by it going stale are related to its antioxidant content and, to a lesser extent, the stability of certain beneficial compounds.

First, some data. The largest scientific study ever carried out on coffee, involving a sample of 500,000 people, found that, all other things being equal, coffee drinkers live around 2 years longer than non-coffee drinkers.

Notably, and against all odds, the study found that coffee drinkers were 23% less likely to have heart failure.

The elements present in coffee that may explain this are as follows:

  • Antioxidants (especially Chlorogenic Acids - CGAs): Coffee is one of the richest dietary sources of antioxidants, particularly chlorogenic acids. These compounds are well-known for their anti-inflammatory, antidiabetic, and potentially anticancer properties. They help neutralize harmful free radicals in the body, reducing oxidative stress, which is linked to various chronic diseases like heart disease, type 2 diabetes, and certain cancers.

    • How staling affects them: Oxidation is a core part of staling, and it directly breaks down these delicate antioxidant compounds. As coffee beans or grounds are exposed to air, light, and heat, the chlorogenic acids degrade, diminishing their potency. While stale coffee isn't harmful, it certainly doesn't offer the same antioxidant punch as fresh coffee.

  • Other Beneficial Compounds: Coffee contains a complex array of other bioactive compounds beyond just antioxidants, including:

    • Trigonelline: This alkaloid contributes to coffee's aroma and flavor and also degrades during roasting, forming nicotinic acid (a form of niacin or Vitamin B3). While some degradation is part of the roasting process, further breakdown can occur with prolonged exposure to heat and air in stale coffee.

    • Diterpenes (Cafestol and Kahweol): These compounds are known for their potential protective roles against some cancers. Their stability in stale coffee isn't as widely highlighted as antioxidants, but general degradation of oils can occur.

In summary, the major health benefits compromised by stale coffee are those derived from its rich antioxidant profile. The protective effects against oxidative stress and inflammation will be significantly reduced compared to freshly brewed coffee.

If you make coffee and put it in a thermos, will it get stale?

We all love to bring our coffee thermos with us, be it to the office, on a roadtrip or on a hike. It may keep your coffee hot, but will it keep coffee's flavors and its potent health benefits? The short answer is no. Here is why.

Coffee in a thermos will still go stale, although the rate at which it does depends on several factors:

  • Temperature: While a thermos keeps coffee hot, higher temperatures actually accelerate the staling process. The heat causes the desirable volatile aromatic compounds to degrade and escape more quickly, and also speeds up oxidation reactions.

  • Air Exposure (Headspace): The amount of air trapped above the coffee in the thermos is a significant factor. The more air there is, the more oxygen is available for oxidation. Filling the thermos to the brim can help minimize this.

  • Time: Regardless of the storage method, time is an enemy of coffee freshness. Even in a thermos, brewed coffee will gradually lose its optimal flavor and aroma over several hours. Some studies suggest that certain aromatic compounds can decrease by more than 50% within 20 minutes of being in a hot thermos.

  • Cleanliness of the Thermos: Over time, coffee oils and residues can build up on the inner surface of a thermos. These oils can oxidize and turn rancid, imparting an unpleasant "thermos taste" to subsequent brews. Regular, thorough cleaning is essential.

Therefore, keeping your coffee in a thermos is not really a good solution if you care a tiny bit about coffee's health benefits and the diversity and strength of its flavours and aromas.

Can you use it in a car?


Yes. A usb/usb-c cable is provided in the package as well as a charger. If your car only has a cigarette lighter, you will need to buy an adapter.



Is the freshness of the coffee guaranteed?


Yes. If you use the machine with coffee capsules, they are by definition hermetically sealed and vacuum-packed, which prevents any oxidation process. If you use the machine with ground coffee, it's best to consume the coffee as quickly as possible once ground (up to a few days), or keep it in an airtight electrical canister to create a vacuum.



Can you make milk with it?


Yes, you can use the nespresso capsules with powdered milk inside to have a nice milk with foam.



What's the battery capacity?


A full battery can make about 4 to 5 coffees if you use the heating system to warm the water. If you have hot water at hand then you can make about 100 coffees with it



Can you make a long coffee / americano with it?


The Nomaduo is designed to make a short and strong espresso. However, if you insist on making an americano with it, you can use our premium 18g ground coffee basket. You will get a very intense espresso with it, that mixed with hot water will basically make you a long americano. Most people do not know this but an americano is just a diluted version of an espresso. So yes, it can.
